Behind the Marble project stands a dedicated team you might have encountered at Chevo’s restaurant in Zapruđe. It all began in 2015 when the Kovačević brothers envisioned bringing the best barbecue to the neighborhood of Zapruđe. Their passion for meat and grilling, combined with a commitment to learning and continuous exploration, has taken them far beyond their initial goals.
In 2017, we started our journey of dry-aging meat with our first chamber, which had a modest capacity of 100 kilograms. Today, at the entrance to Marble, we proudly display an impressive dry-aging chamber with a capacity of 2,000 kilograms, designed and built by us. It is currently the largest of its kind in the region. Back in 2018, we began dreaming of opening a steakhouse. This bold step in hospitality marks a new direction for our culinary story and the beginning of a hospitality group called WE KNOW MEAT.
Steakhouse Marble offers a unique experience where you can choose your preferred cattle breed, steak cut, and aging period — from 7 to over 100 days. Our steaks are cooked to perfection on a one-of-a-kind Vulcano Gres Spanish grill, custom-made exclusively for Marble. This grill enhances our meat with a variety of textures, rich flavors, and irresistible aromas.
To showcase the unique beef terroir of each cut, the heart of Marble is our dry-aging chamber, where we age around ten different cattle breeds at any given time, with a capacity exceeding 2,000 kilograms.
In addition to steaks, Marble features a wide range of creative dishes made with seasonal vegetables and international classics reimagined in a modern style. Our dessert selection blends seemingly unusual flavors into unique sweet creations.
